JBT will be staging a Thermal Processing Course for food processing professionals in Madera, California from October 14-18, providing a thorough insight into the technical issues surrounding the thermal processing of foods. The five-day course, which takes place inside a JBT facility, will help attendees better understand how their decisions can positively impact the quality and safety of their food products.
The educational program, which includes hands-on pilot plant experience, is aimed at helping participants understand the critical parameters that control the safe and quality-friendly thermal processing of foods. It will be followed by a two-day Aseptic Training from October 22-23 at JBT’s Madera Process Technologies Laboratory.
Karen Brown, Senior Research Engineer at JBT Process Technologies Laboratory Madera, said: “Not only will we be talking about JBT retorts, we will also be talking about all sorts of retorts and federal legislation. The people we expect to attend will be typically from the low-acid canned food industry because these kinds of foods, which are heavily regulated, can support the growth of the organism that causes botulism.
“The course includes the micro-biological background and some of the history of thermal processing for low-acid canned foods, as well as the methods that are used to test sterilizers and products that form part of the development of safe thermal processes.”
